In document properties next to current workflow there is the hand icon to stop the workflow and the X to remove the workflow. Can you please explain the difference between these options?

Pretty straight-forward.
You can only delete a workflow if no task has started. In other words you many have accidentally submitted the document to a workflow and should be able to delete the workflow if no one has started work. Once a workflow is deleted, it is as if it has never started.

Stopping the workflow however, stops the workflow at its tracks. All current tasks and future tasks are dropped but you can clearly see that the workflow was stopped.

Oh, by the way, both actions are subject to a "Library Policy" called "Remove/Stop Workflow".
This policy controls who can remove/stop workflows.

Note: Even if someone with Full Control rights has been given permission to delete a workflow, the workflow can only be deleted if it has not started.
