Is it possible for users to be able to click on a gadget (named Contracts Register) located on our portal, and have it open its linked file directly in edit mode, allowing any user to add/update our contracts register. How can this be done?

Yes. It is possible if the document is a WebDAV enabled format such as a Word document.
You do need to make sure that the document security is assign as "Everyone Change" so that everyone can edit the document.
